  Interview with Poh - A food lover's journey

 

We dropped in on Poh at her cafe Jamface in Adelaide Central Market and chatted about her food adventures, past and future.

 

 

What was your first overseas trip?

I think I was probably about five-years-old. One of my uncles was a pilot and we flew from Malaysia to Singapore on a tiny plane with three extended families on board.

What is your favourite food destination now?

Definitely Europe. It's never the expensive restaurants that inspire me, often it's something very simple that blows my mind. For instance, I remember the first time being in Paris, and biting into a French baguette covered in French butter and perfectly made jam. Simple, perfect.

Do you collect recipes when you travel? Is there a favourite?

Always. If I come home from a trip with two recipes or even a couple of ideas, I feel that the recipe hunting has been a success. Sometimes it's more about a way of eating and understanding the general flavour profiles of a cuisine rather than a specific recipe. My favourite experience was eating a millefeuille for the first time, in Paris. The pastry was so well caramelised that it was almost burnt, but the flavour was so full, deep and complex. After that my pastry making was transformed.

Is there a town, city, or country on your 'food' travel bucket list?

Yes, I'd love to visit Vietnam, to experience the clean, bright, herbaceous eating, as well as the French colonial architecture. I'd love to go to Mexico for the colour, the street food and art. Southern Italy is on my list, because I only spent time in the north on my last visit, and the South of France to nestle into a cottage for a few weeks, to paint and to cook from the local markets.

  The interview that takes health food author back to Thailand

 

Jessica Sepel, an expert nutritionist, author, and founder of JSHealth, is constantly in search of healthy everyday meals. Her Pad Thai recipe is inspired by her many trips to Thailand and her passion for healthy Thai food.

We spoke to Jessica about her favourite travel memories, the recipes she’s collected in her travels, and her dream food destination.

 

What was your first overseas trip?

I was born in South Africa. My first trip overseas was when I was 13-years-old with my family when we travelled to Australia. We were visiting family who were already living here.

Do you have a favourite food memory?

I have a strong memory of drinking watermelon juice. We didn’t have watermelon juice in South Africa and I was crazy about it! My next trip was to Thailand soon after for my Grandfather’s 60th birthday. I have such fond memories of the Pad Thai. That trip began a lifelong love affair with Thailand. My husband and I were married there. At my wedding we had healthy Thai dishes, Pad Thai, fragrant stir frys, steamed whole fish - it was a fantastic wedding feast.

What is your favourite food destination?

Thailand. We go every year for a holiday at new year. It is always my holiday, and food, destination of choice. We eat at local restaurants, run by families. They know us now and they make homemade Thai food for us. It is very healthy, clean eating - no additives or preservatives, lots of fresh vegetables, and just caught seafood. I always feel great after eating it. I collect recipes while I am there, and adapt them when I come home, like the Pad Thai recipe I made with rice noodles, prawns, cashew nuts and fresh coriander.

Is there a town, city, or country on your 'food' travel bucket list?

Japan. I love sushi. If I go out for dinner I usually opt for Japanese. I’d love to experience traditional Japanese dining in Tokyo or Osaka Sitting at a sushi bar watching the chefs at work slicing sashimi is a dream. I’d also like to go to Los Angeles to eat and to research. They are at the forefront of the healthy food scene, there are some cutting-edge concepts and cafes and some inspiring, creative cooks and chefs doing really interesting things.
